
Vidal Ice Wine is a white wine produced in the VQA Niagara Peninsula. Harvested in late December 2017 during a period when temperatures ranged from -10°C to -13°C, the frozen Vidal grapes were settled in stainless steel tanks. A cool fermentation process was followed, concluding in late-February, and natural cold stabilization was achieved by exposing the wine to the outdoors. It was then stored in stainless steel for eight months, filtered, and bottled. The wine exhibits a rich bouquet of apricots and honey, with an enduring scent of fresh peaches. The palate reveals intricate flavors of honey, ripe tropical fruits, and lychee, harmonized with a well-balanced sweetness and subtle citrus notes that enhance the wine's balanced acidity. It is recommended to be served chilled at around 12°C.
