120, 140, 160, 180, 200, 170 degrees well beef & pork. 165 degrees poultry. 160 degrees medium beef & pork ground meat. 145 degrees medium rare beef & pork fish. usda cooking temperatures (visit our website for a full list of safe cooking temperatures). rare: 140 degrees (the usda does not recommend rare 140 degrees as a safe cooking temperature) beef; med r: 145 degrees beef, 145 degrees pork; med: 160 degrees beef, 160 degrees pork; w done: 170 degrees beef, 170 degrees pork, 165 degrees chicken, 145 degrees fish. how to use: (1)thaw meat entirely before use. (2) insert thermometer in the thickest part of the meat, 3/4 past the center, not in contact with bone, fat or gristle. (3) adjust temperature slide reference to desired position and monitor doneness while cooking in the oven.
