Utilizing the whole fruit, including the pits, the cherries undergo cold fermentation with a specialized winemakers' yeast to ensure a rich extraction of flavor. Approximately five pounds of cherries are required to produce a 200 ml bottle of Kirsch Eau De Vie. Enjoyers can expect a distinct cherry aroma with almond nuances and a smooth, enduring finish.
