The blend is derived from a combination of acid and bittersweet cider apples, each pressed and stored separately before undergoing dual fermentations. The art of distillation is carried out with precision, utilizing both single and double methods while discarding the less desirable heads and tails, ensuring that only the finest heart of the distillation contributes to the Chauffe Coeur's profile. The final blend is achieved after extensive aging, with careful adjustments made to reach an alcohol volume of 43%, as determined optimal by the cellar master.
