For thick cuts of meat, use with stem perpendicular for leverage ' thermometer acts as a handle. For thin, delicate foods (fish and burgers) place stem in 'pen style' (straight) location for most accurate readings. A thin, step-down probe allows for the smallest puncture in the food to retain juices and flavor. HOLD feature 'LOCKS' in the temperature even when thermometer is removed from food. An expanded temperature range from -40°F to 482°F/-40°C to 250°C.
