Directions

Directions: Keep frozen. Puff pastry slabs, sheets, and squares baking instructions. Storage: Store frozen at -10 degrees F or below until ready to use. handling: Put 1 slab, 2 sheets, or 12 squares on a parchment lined 18 x 26 inch sheet pan without overlapping pieces. Cover with parchment paper to prevent drying. Slabs: Thaw overnight under refrigeration (38-45 degrees F) or 2-3 hours at room temperature. Sheet to desired thickness. Sheets & Squares: Thaw at room temperature for 10-15 minutes. Make up desired pieces and place on parchment lined 18 x 26 inch sheet pan. Brush top of pieces with water or a light egg wash. Top with granulated sugar if desired. Baking: Conventional Oven 400 degrees F: 16-21 minutes for 2 oz pieces; 17-22 minutes for 4 oz pieces; 21-16 minutes for 10 oz pieces; 23-28 minutes for 16 oz pieces. Rack Oven 375 degrees F: 13-18 minutes for 2 oz pieces; 14-19 minutes for 4 oz pieces; 18-23 minutes for 10 oz pieces; 20-25 minutes for 16 oz pieces. Convection (If needed, rotate pans halfway through the bake to achieve a uniform bake) Oven 350 degrees F: 13-18 minutes for 2 oz pieces; 14-19 minutes for 4 oz pieces; 18-23 minutes for 10 oz pieces; 20-25 minutes for 16 oz pieces. (Baking times will vary by piece size, oven type, and quantity of product in oven). Remove from oven when pieces begin to brown. Note: Puff Pastry must be thoroughly baked to yield a light, flaky, and crispy texture. Adjust baking times if necessary to compensate for your oven's unique characteristics. Finishing: Allow to cool before icing. String ice if desired with Karp's Sweet Roll Icing.
