Fry your turkey for approximately 3.5 minutes per pound. Remove and let cool for 15 to 20 minutes. Carve and serve your turkey. Make sure you do not overfill your fryer. 3 gallons is the appropriate amount for 28 qt and 30 at fryers when frying a 10 to 12 lb turkey. Ease your turkey into the oil. Do not drop it in!
