Directions: 1 pkg soup mix, 1-1/2 cups chicken breast, chopped, 2 tbsp olive oil, 7 cups water. Place olive oil and chicken breast in a soup kettle and saute. Add water and rice vegetable mixture. Bring to boil, cover, reduce heat and simmer for 25 minutes. Combine soup base packet with 3 tbsp of cold water and stir with a fork until smooth. Add to soup while stirring. Cover and cook 10 minutes longer. Makes approx 8 (1 cup) servings.
