- Pork Belly Burnt EndsWe lay these giant cubes of belly onto racks and season them in our Sweet Mary pork dust, then they go into Bronsen for three to four hours to build their sweet, smokey crust. After this it’s glazing time and then back in to set and add a little more smoke.
4 to 6 cubes of pork candy per portion. Decadent AF but hey.

- Texas Beef Cheek SandwichTwo fat slices of beef cheek on a brioche with red cabbage slaw, pickles, crispy onions and bbq sauce.
- Beef Brisket12 plus hour oak smoked, MacDuff 1890 beef brisket. The king of slow smoke barbecue.

- Cherry Habanero BBQ SauceThe young pretender to the BBQ sauce crown. Cherry Habenero has become a firm fave in the US BBQ scene. Sweet, complex, with a punch of heat, it goes well with our beef and pork belly burnt ends.
- Carolina Gold SauceMade with mustard, honey, maple syrup, thyme, treacle and apple cider vinegar. This Carolina staple is sweet and tangy. Goes well with pork in particular.
