Vegetable Chimichanga

A large deep-fried flour tortilla filled with, broccoli, cauliflower, yellow squash, zucchini, and carrots. Topped with cheese sauce. Served with rice, beans, lettuce, pico de gallo, sour cream, and guacamole.
