12 隻 / pcs 水煮我們的餃子方法 1. 取一大小適中的鍋,放入約三分之二水。 2. 放入少許鹽,蓋上鍋蓋以大火把水燒滾。 3. 按鍋之大小,放入適量餃子,餃子不可過多,以不滿一層為準。 4. 蓋上鍋蓋煮半分鐘。 5. 打開鍋蓋,用木鏟輕輕攪動約10秒,讓餃子浮起來不粘在鍋底。 6. 蓋上鍋蓋,大火煮至水滾。(約半分鐘) 7. 放入一小杯冷水,再蓋上鍋蓋,煮至水滾。(約2至3分鐘) 8. 打開鍋蓋,再放入一小杯冷水,讓水再次煮滾。(約2分鐘) 9. 餃子就煮好,撈起餃子,排去多餘水份後上碟。 煎我們的餃子方法(鍋貼式) 1. 把餃子排放在不粘底煎鍋上。 2. 放入約1茶匙生油,開爐至大火。 3. 放入適量開水至深度能覆蓋餃子一半高度為準。 4. 當水滾至產生水蒸氣,蓋上鍋蓋。 5. 把爐火轉至溫火,讓餃子在鍋內煮約12至15分鐘。 6. 打開鍋蓋,轉大火。 7. 大火煎至所有水被蒸發掉,餃子底皮香脆為止。 8. 剷起餃子上碟。 冷藏我們的新鮮餃子方法 1. 把新鮮未煮餃子分開排放在盤子上,餃子不可互相黏連。 2. 把整盤放入冰箱急凍隔內。 3. 冷凍至完全凍結。(一般家用冰箱需約2至3小時) 4. 把凍結好的餃子倒入膠袋內,擠走多餘空氣並密封,繼續冷凍,可存放 約兩星期。 * 若烹煮冷凍餃子,無需解凍,但烹調時間需著量增加。 How to boil our fresh dumplings 1) Fill a large pot two-thirds of the way with water. 2) Put into a little salt, cover and bring to a boil over high heat. 3) Add as many dumplings as can fit comfortably in a single layer in the pot. 4) Cover the pot and let the dumplings boil for half minute. 5) Remove the lid, stir the dumplings with a wooden scoop to avoid them from sticking to pot. (around 10 secs.) 6) Put the lid on until the water boil again. (around 30 secs.) 7) Put into a small cup of cool water, cover and bring to boil over high heat again. (around 2 to 3 mins.) 8) Pour into another cup of cool water, cook with no lid til water totally boils. (around 2 mins.) 9) Fish them out with a strainer, drain them, and serve. How to pan-fry our fresh dumplings 1) Line up the dumplings around the non-stick pan. 2) Add about 1 tablespoon vegetable oil, turn the heat on to high. 3) With a lid ready, add enough water to cover the dumplings about half way. 4) Since the oil is really hot at this point, as soon as the water is added some of the water is going to turn into steam. Place the lid onto the whole shooting match. 5) Turn heat to about low-medium, steam for about 12-15 minutes. 6) Open the lid when 15 minutes are up. 7) Turn the heat up again, and let the water/liquid left over evaporate, and the crispy part on the bottom of the dumplings develop. 8) Flip onto plate.
